
Sausage Tortellini Soup Recipe

1 lb Ground Italian Sausage (sweet or hot)
3/4 lb 3 Cheese Tortellini
4 cups Chicken Broth
3 cups Water
2 cups uncooked Spinach
1/2 cup Heavy Cream
2 cloves Garlic finely chopped
1/2 Yellow Onion chopped
1/2 tsp Red Pepper Flakes (optional)(I’d leave out if you do hot sausage or don’t like spicy)
1 tbsp Garlic Powder
1 tsp Italian Seasoning
1/2 tsp Smoked Paprika
2 tsp Paprika
2 tsp Salt
2 tsp Pepper
Block of Parmesan Cheese for grating
1 Tbsp XVOO (extra virgin olive oil)
4 tbsp Tomato Paste
Directions
- In a frying pan, add your olive oil, ground sausage and onions. Cook up until sausage is almost cooked through. Then add your garlic and cook sausage till brown. Drain oils and remove from heat.
- In a crockpot, add your sausage mixture, chicken broth, water, seasonings and tomato paste.
- Set your crockpot to high and cook for about 25-30 minutes to let the tomato paste break apart.
- Next add your refrigerated non cooked tortellini and your heavy cream.
- Cover and let sit on high for about 10 minutes.
- Add in your spinach, cover and let sit for another 10 minutes
- If it still needs to be heated a bit, set your crockpot to Warm and let sit until at desired temperature.
- When serving, grate a block of parmesan cheese over the top.
- Enjoy!
- ** If you like your soup broth to be a tad thicker, you can always add a bit of corn starch to thicken it up.
