If there is one thing I can never have enough of during football season, fall parties, or the holidays, it is a really good warm dip. And this Smoky Bacon Cheeseburger Dip might be one of my new favorites.
It has everything you love about a bacon cheeseburger packed into one creamy, cheesy dip — seasoned ground beef, crispy bacon, cream cheese, plenty of cheddar, a little smoky flavor, and all those classic cheeseburger flavors mixed together.
It is rich, cheesy, incredibly easy to make, and absolutely perfect for feeding a crowd.

The Ultimate Cheeseburger Dip for a Crowd
I wanted this dip to actually taste like a bacon cheeseburger rather than just ground beef mixed with cheese.
The Worcestershire sauce, Dijon mustard, smoked paprika, cheddar cheese and crispy bacon give it so much flavor. I also like adding a little ketchup because it brings in that slightly sweet and tangy cheeseburger flavor without overpowering the dip.
The cream cheese makes everything smooth and creamy, while the smoked Gouda gives it a little extra smoky flavor that works perfectly with the bacon.

Most of the prep is simply browning the beef and bacon. After that, everything goes into the crockpot and melts together.

What Gives It That Smoky Flavor?
The combination of crispy bacon, smoked paprika and smoked Gouda cheese gives this cheeseburger dip its smoky flavor.
It is not overpowering at all. You still get that classic creamy bacon cheeseburger flavor, just with a little smoky finish.
If you cannot find smoked Gouda, you can simply replace it with more shredded cheddar.
What Should I Serve With Cheeseburger Dip?
Tortilla chips are always an easy option, but I especially love serving this dip with sturdy potato chips.
Pretzel bites, toasted baguette slices, crackers, mini naan, French fries, waffle fries and tater tots are all great choices too.
For parties, I usually like putting out a couple of different options so everyone can grab whatever they like.
Add Your Favorite Cheeseburger Toppings
The toppings are where you can really have fun with this dip.
Top it with extra crispy bacon, shredded cheddar, finely chopped dill pickles and sliced green onions right before serving.
You can even drizzle a little ketchup or burger sauce over the top for even more cheeseburger flavor.
Can I Make It Ahead?
Yes. You can cook your bacon and ground beef ahead of time and keep them refrigerated until you are ready to assemble everything.
When it is time to serve, add everything to the crockpot and let it heat until melted and creamy.
Keeping It Warm
Once the dip is completely melted, turn your crockpot to the warm setting.
Give it a quick stir every once in a while. If it gets thicker as it sits, simply stir in a small splash of milk.
Ingredients
1 pound ground beef
8 slices bacon, chopped
8 ounces cream cheese, softened and cubed
1 1/2 cups shredded sharp cheddar cheese
1 cup shredded smoked Gouda cheese
1/2 cup sour cream
1/3 cup milk
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
1 tablespoon Dijon mustard
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper
Salt, to taste
1/3 cup finely diced dill pickles
2 tablespoons sliced green onions, optional
Extra shredded cheddar, bacon and diced pickles for topping
Directions
- 1. Add the chopped bacon to a large skillet and cook until crispy. Transfer it to a paper towel-lined plate and set aside a little bacon for topping.
2. Drain most of the bacon grease from the skillet, leaving a small amount behind.
3. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain off any excess grease.
4. Stir the Worcestershire sauce, Dijon mustard, smoked paprika, garlic powder, onion powder and black pepper into the beef.
5. Add the cooked beef, cream cheese, cheddar cheese, smoked Gouda, sour cream, milk, ketchup and most of the cooked bacon to the crockpot.
6. Cover and cook on LOW for about 1 1/2 to 2 hours, stirring occasionally, until the cheeses are completely melted and the dip is hot and creamy.
7. Stir in the diced dill pickles.
8. Top with additional shredded cheddar, crispy bacon, diced pickles and green onions.
9. Turn the crockpot to WARM and serve with potato chips, tortilla chips, pretzel bites, toasted baguette slices, fries or tater tots.
