There is nothing better than an easy crockpot dinner once the weather starts cooling down, and this Crockpot Stuffed Pepper Soup is one of those recipes that is going straight into my fall and winter dinner rotation.

It has everything you love about traditional stuffed peppers—savory ground beef, tender peppers, tomatoes, rice, garlic, and Italian seasoning—but instead of stuffing individual peppers and baking them, everything comes together in one big cozy bowl.

One of my favorite things about this recipe is how simple it is.

You do need to quickly brown the ground beef before adding it to the slow cooker, but after that, the crockpot really does most of the work for you.

The peppers become perfectly tender while they cook in the tomato and beef broth, and all of those flavors have hours to come together.

I also like adding the rice toward the end instead of letting it sit in the crockpot all day. This keeps the rice from getting overly soft and soaking up every bit of the broth.

The finished soup is hearty without feeling too heavy, which makes it such a good family dinner.

All the Flavor of Stuffed Peppers Without the Work

I love traditional stuffed peppers, but they definitely take a little more time to prepare.

You have to hollow out the peppers, prepare the filling, stuff each pepper individually, arrange everything in a baking dish, and then wait for them to bake.

This soup gives you those same flavors with a fraction of the work.

You still get sweet bell peppers, seasoned beef, tomatoes and rice in every spoonful, but everything is chopped and tossed into the crockpot.

Basically, it is stuffed peppers for nights when you don’t actually feel like stuffing peppers.

What Kind of Bell Peppers Should I Use?

I like using a combination of red and green bell peppers.

Green peppers have that classic slightly savory stuffed-pepper flavor, while red peppers add a little natural sweetness.

You could also use yellow or orange peppers—or just use whatever combination you already have in your refrigerator.

This is definitely one of those recipes where you don’t have to be too exact.

Ground Beef for Stuffed Pepper Soup

I normally use lean ground beef for this soup because you get plenty of flavor without ending up with too much grease in the crockpot.

Brown the beef in a skillet first and drain off any excess grease before adding it to your slow cooker.

You can also substitute ground turkey if you prefer.

For even more flavor, you could use half ground beef and half Italian sausage. That would give the soup a little bit of that cozy Italian flavor that works so well with the tomatoes and peppers.

Don’t Add the Rice Too Early

This is one of the biggest tips I have for making crockpot stuffed pepper soup.

Rice absorbs a LOT of liquid.

If you put cooked rice into your crockpot first thing in the morning and then let everything cook all day, you can end up with rice that is very soft and a soup that is much thicker than you wanted.

My favorite option is to cook the rice separately and stir it into the soup shortly before serving.

This also makes leftovers easier because the rice doesn’t continue soaking up as much broth while the soup sits in the refrigerator.

The Perfect Cozy Crockpot Dinner

This is exactly the kind of meal I want waiting for me at the end of a chilly fall day.

Everything is warm, savory and comforting, and you really don’t need much on the side.

Serve your stuffed pepper soup with crusty bread, garlic bread or a simple salad and dinner is done.

Can I Make Crockpot Stuffed Pepper Soup Ahead of Time?

Absolutely.

The soup base actually tastes even better after sitting because the flavors have more time to come together.

If you are making the soup specifically for meal prep, I recommend storing the cooked rice separately from the soup.

Then simply add however much rice you want to each bowl before reheating.

This keeps the rice from becoming too soft and keeps your soup nice and brothy.

How to Store Leftovers

Let the stuffed pepper soup cool and transfer it to an airtight container.

Keep it refrigerated for approximately 3–4 days.

When reheating, you may need to add a splash of beef broth because the rice will naturally absorb some of the liquid.

Warm individual servings in the microwave or heat the soup gently in a saucepan on the stove.

Can I Freeze Stuffed Pepper Soup?

Yes!

For the best texture, freeze the soup without the rice.

Let the soup cool completely and place it in freezer-safe containers. Freeze for up to approximately three months.

Thaw it overnight in the refrigerator and reheat it on the stove, then stir in freshly cooked rice before serving.

Ingredients


  • 1 pound lean ground beef
    1 small yellow onion, diced
    3 cloves garlic, minced
    1 green bell pepper, diced
    1 red bell pepper, diced
    1 (14.5-ounce) can diced tomatoes, undrained
    1 (15-ounce) can tomato sauce
    4 cups beef broth
    1 tablespoon tomato paste
    1 tablespoon Worcestershire sauce
    1 teaspoon Italian seasoning
    1 teaspoon garlic powder
    1 teaspoon onion powder
    1/2 teaspoon smoked or regular paprika
    1 teaspoon salt, or to taste
    1/2 teaspoon black pepper
    1 cup cooked white or brown rice
    Fresh parsley, for serving
    Shredded Parmesan cheese, optional for serving

Directions

  • Directions
    Brown the ground beef. Add the ground beef and diced onion to a large skillet over medium heat. Cook until the beef is completely browned and the onion begins to soften, about 7–8 minutes. Drain away any excess grease.
    Add the garlic. Stir the minced garlic into the beef and cook for another 30–60 seconds, just until fragrant.
    Transfer everything to the crockpot. Add the cooked beef and onion mixture to your slow cooker. Add the diced green pepper, red pepper, diced tomatoes, tomato sauce, beef broth and tomato paste.
    Season the soup. Stir in the Worcestershire sauce, Italian seasoning, garlic powder, onion powder, paprika, salt and black pepper.
    Slow cook. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the peppers are tender and all of the flavors have come together.
    Add the rice. About 15–20 minutes before serving, stir in 1 cup of cooked rice. If you prefer a soupier consistency, add a little additional beef broth.
    Taste and adjust. Taste the soup and add additional salt, pepper or Italian seasoning if needed.
    Serve. Ladle into bowls and finish with freshly chopped parsley and Parmesan cheese if desired. Serve warm with crusty bread or garlic bread.
