Ingredients
2 lbs boneless, skinless chicken breasts or chicken thighs
1 1/2 lbs baby Yukon Gold potatoes, halved
4 cloves garlic, minced
1 cup chicken broth
1 cup heavy cream
1 cup freshly grated Parmesan cheese
2 tbsp butter
1 tsp Italian seasoning
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp paprika
1/2 tsp salt, or to taste
1/2 tsp black pepper
2 tbsp chopped fresh parsley, plus more for garnish
Extra grated Parmesan for serving
Directions
- Lightly grease the inside of your crockpot.
Add the halved baby potatoes to the bottom of the crockpot. - Place the chicken over the potatoes.
Season the chicken and potatoes with the Italian seasoning, garlic powder, onion powder, paprika, salt, and black pepper. - Sprinkle the minced garlic over everything.
- Pour the chicken broth and heavy cream into the crockpot.
Add the butter in small pieces over the top.
Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours, until the potatoes are fork-tender and the chicken is fully cooked. - Once cooked, gently shred or cut the chicken into larger bite-sized pieces, depending on how you like it.
- Stir in the freshly grated Parmesan cheese and chopped parsley until the sauce becomes creamy and everything is well coated.
If you want the sauce thicker, leave the crockpot uncovered on warm for about 10–15 minutes and stir in a little extra Parmesan. - Spoon the chicken, potatoes, and creamy garlic Parmesan sauce into bowls or onto plates.
