Absolutely.

Mix it separately before stirring it into the hot soup so you don’t end up with any lumps.

You can also let the soup sit uncovered for a little while after adding the creamy ingredients. It will naturally continue to thicken as it sits.

Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts

  • 1 cup wild rice blend, rinsed

  • 3 medium carrots, peeled and sliced

  • 3 celery stalks, sliced

  • 1 small yellow onion, diced

  • 3 cloves garlic, minced

  • 6 cups chicken broth

  • 1 tsp dried thyme

  • 1 tsp dried parsley

  • 1/2 tsp dried rosemary

  • 1 tsp salt, or to taste

  • 1/2 tsp black pepper

  • 1 bay leaf

  • 1 cup heavy cream

  • 2 tbsp butter

  • 2 tbsp all purpose flour

  • Fresh parsley, for garnish

Directions

  • Add the chicken breasts to the bottom of the crockpot.
  • Add the rinsed wild rice, carrots, celery, onion and garlic.
  • Pour in the chicken broth, then add the thyme, parsley, rosemary, salt, pepper and bay leaf. Stir everything around the chicken.
  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is cooked through and the wild rice is tender.
  • Remove the chicken from the crockpot and shred it with two forks. Return the shredded chicken to the soup.
  • In a small saucepan, melt the butter over medium heat. Whisk in the flour and cook for about 1 minute.
  • Slowly whisk in the heavy cream and cook for 2–3 minutes, until the mixture begins to thicken.
  • Pour the cream mixture into the crockpot and stir well.
  • Cover and cook for another 15–20 minutes, just until the soup is hot and creamy.
  • Remove the bay leaf, taste and adjust the salt and pepper if needed.
  • Ladle into bowls and top with fresh parsley and a little cracked black pepper. Serve with warm crusty bread.
  • Tip: If the soup gets too thick, stir in a little extra chicken broth until it reaches the consistency you like.
